Slow Cooked Beef Chilli

Method

  1. Preheat the oven to 140°C (fan) / Gas Mark 1 or prepare your slow cooker.
  2. Heat a little olive oil in a large frying pan. Brown the beef in batches until well coloured, then transfer to a casserole dish or slow cooker.
  3. Add the sliced chorizo to the same pan and fry until it releases its oil and starts to crisp. Transfer to the casserole dish with the beef.
  4. Add a splash more olive oil to the pan, then gently cook the onions and garlic in the chorizo oil for 5 minutes until softened.
  5. Stir in the allspice, cumin, cayenne, bay leaf, chilli jam, balsamic vinegar, and chopped tomatoes. Season well, then pour the mixture into the casserole or slow cooker.
  6. Stir in the red wine (or stock) and grated dark chocolate. Mix well, then cover with a lid.
  7. Cook in the oven or slow cooker for at least 3 hours on a low setting, until the beef is tender and the sauce is rich. (We make ours in the morning, giving it all day to infuse). If using kidney beans, add these to the dish an hour before serving.
  8. Spoon the chilli into bowls, top with chopped coriander and a dollop of sour cream and serve with rice.

Jam Tip

We love using The Original Chilli Jam for this dish — it gives deep, balanced warmth.
For anyone who likes it hotter, stir through a teaspoon of The 3 Peaks Chilli Jam to individual portions just before serving for a fiery, smoky twist.

  • Olive oil
  • 800 g braising or stewing steak, cut into chunks
  • 100 g chorizo, sliced
  • 1 onion, chopped
  • 2 garlic cloves, chopped
  • 1 tsp ground allspice
  • 1 tsp ground cumin
  • ½ tsp cayenne chilli pepper
  • 1 bay leaf
  • 1 tbsp balsamic vinegar
  • 2 tbsp The Original Chilli Jam
  • 1 × 400 g tin chopped tomatoes
  • 200 ml red wine or beef stock
  • 30 g dark chocolate, grated
  • 1 × 400 g tin kidney beans, drained (optional)
  • Salt and freshly ground black pepper

To serve

  • Chopped fresh coriander
  • Sour cream
  • Steamed rice
